It's a six-minute journey each way, so you've time to grab your camera and take in the views. At the top, your guide will show you around the phoenix-like fortress, which has been forced to resurrect twice after earthquakes devastated the original structures in 1755 and1960. Back down in the city, your next stop is the Argan cooperative. Here, you'll discover the secrets behind the production of authentic bio Argan oil – a staple in local cuisine and cosmetics.The final part of your day is a trip to one of Morocco's largest markets, Souk El Had. Try not to be intimidated by its 6,000 shops and stalls – it's a labyrinth, but your local guide is your superpower here. At 1,160 metres above sea level, it marks the beginning of the foothills of the Atlas Mountains. You'll spend plenty of time here, checking out the cascading waterfalls, steep, rocky valleys and terraced hillsides – trust us, you won't be short of somewhere to point your camera. Settle in for a traditional lunch here, with homemade bread and olive oil, a Berber tagine and Moroccan salad.
